Why three seats
The smallest table where every hand still has tension.
Heads-up is a duel — the same two people, every hand, until one of them is gone. Full-ring is a committee, where folding is usually right and most hands are spent watching. Three is the table where you are in almost every pot, position changes every hand, and the match still resolves inside a lunch break.
